Anantara Palais Hansen Vienna Hotel has started the year with confidence, as its fine dining restaurant, EDVARD, retained its Michelin star. The prestigious recognition marks a first for the talented Head Chef Paul Gamauf, who has been at the helm of EDVARD since October 2023.

 

Named in tribute to the original architect of the hotel, Baron Theophil Edvard von Hansen, EDVARD boasts a beautifully appointed space that reflects an air of elegance. The sophisticated décor sets the stage for Chef Gamauf’s exquisite tasting sets that change with the seasons, reflecting his love for nature. Impeccably sourced ingredients, often foraged, are either used for cooking, pickled, preserved or processed into zero-waste beverages. EDVARD’s extensive wine collection spotlights local and regional vintages.

 

EDVARD is a culinary haven that embodies the intersection of tradition and innovation, taking guests on a gastronomic journey that celebrates the richness of local ingredients while embracing global influences, paired with its deep commitment to sustainability.
